Michael Symon's Beer-Braised Brats with Kimchi
This week on Simply Symons , Michael puts a twist on a Cleveland tailgate classic with bratwurst poached in beer and kimchi, finished on the grill, and piled onto a toasted hard roll with mustard and more kimchi. It's simple, hearty, a little tangy, and built for game day - or any day you want a seriously good sausage sandwich. Liz pairs it with an experimental cowboy-inspired bourbon sour made with sage-infused bourbon, Benedictine, brown sugar syrup, lemon juice, lemon curd, and egg white. The cocktail doesn't go exactly according to plan, but after some extra shaking and a few adjustments, it turns into a surprisingly refreshing drink that even Liv likes. Along the way, the family debates whether bread belongs in the fridge, whether a hot dog counts as a sandwich, and the best way to actually fit a brat into the bun without losing half of it. By the end, they agree on one thing: split the brat, pile on the kimchi, add plenty of mustard, and wash it down with a bourbon sour.
