Then we take it beyond the individual station and look at what really holds a busy service together: communication. What does “two minutes” actually mean when another station is building its pickup around your answer? What happens when somebody knows they're behind but doesn't communicate it? How does expo synchronize grill, sauté, fry, pantry, runners, and multiple tables without letting one mistake cascade through the board? And when something does go wrong, the answer isn't always to move faster. Sometimes the professional move is to reset the synchronization point and rebuild the pickup around the new reality.
