<p>前回の「番茶で炊いた玄米茶粥」の話から、お茶を“飲み物”ではなく、“だし・香り・食事”として捉え直します。</p><p>番茶・烏龍茶・プーアル茶は、同じチャノキの仲間でありながら、育つ土地や品種、加工、酸化、微生物発酵、熟成によって、まったく異なる味と香りになります。</p><p>今回は、ラオスから中国・雲南省へ入り、西双版納、昆明、大理、麗江、香格里拉を旅した体験をもとに、円盤状の茶餅や茶馬古道、高原で出会った酥油茶（バター茶）の文化を紹介します。</p><p>また、「プーアル茶は脂を流すのか」といった健康イメージとも、無理なく付き合うための考え方を整理。お茶を薬のように捉えるのではなく、その土地の気候や食事、人々の暮らしから生まれた文化として見つめます。</p><p>後半では、茶粥、煮物、焼き浸し、肉や野菜の香りづけ、飲んだ後の茶葉の活用など、料理人として提案したい、お茶の取り入れ方もお伝えします。</p><p>お茶は、成分だけを飲むものではありません。<br>土地と時間、そして人の暮らしを味わうもの。</p><p>いつもの一杯と、毎日のごはんが、少し違って見えてくるお話です。</p>
