Wine On Tap: Cutting Waste & Reinventing Restaurant Wine
In this episode, I sit down with Ted Boscaino of Wine Stream as part of Frontline Tastings in Tampa, Florida to talk about wine on tap, the hospitality industry, reducing wine waste, entrepreneurship, and what it takes to introduce a new serving model into an industry built around long-established habits. Ted explains how his family’s background in hospitality and wine led to Wine Stream, a Tampa-based winery using Italian-produced wine and reusable stainless-steel kegs as an alternative to traditional bottled wine for restaurant by-the-glass programs. Mr. Boscaino and I break down how kegged wine works, including stainless-steel draft systems, nitrogen, limiting oxygen exposure, wine preservation, and why restaurants can lose significant product when bottles are opened for individual glass pours. We also discuss the challenge of getting restaurant owners, managers, bartenders, and customers comfortable with wine coming from a tap when draft systems have traditionally been associated with beer. We get into restaurant operations and customer experience, including why Mr. Boscaino believes smaller, higher-quality wine menus can outperform oversized selections, how reducing packaging and product waste can benefit hospitality businesses, and why staff education is essential when introducing unfamiliar products or systems. Mr. Boscaino also explains how Wine Stream has grown largely through restaurant relationships, customer experience, and word of mouth rather than traditional consumer advertising. The conversation then expands into entrepreneurship, patience, business growth, and the pressure many founders feel to achieve success too quickly.
