There are over 730 sinkholes in central Turkey, and their numbers are surging, threatening farmers’ livelihoods and the country’s food supply chain. These sinkholes occur suddenly when the soil collapses, forming a gaping hole in the earth. The sinkholes are a symptom of the ongoing drought and unsustainable water extraction in Konya province, Turkey's agricultural heartland. The production of water-thirsty crops such as sugar beet is prioritised in this region, which is used to make Turkey’s sugar. To irrigate these crops, farmers have had to rely on licensed and unlicensed wells tapping into the groundwater. Years of drought has meant that underground reserves cannot be renewed, making current farming practices unsustainable. The increased formation of sinkholes is not a surprise for experts who have been warning for years that extracting groundwater could tip the balance of nature. These sinkholes have luckily not caused any deaths but they are revealing that time is running out to save water and agriculture in this region.

An Anthropic researcher's post on X that there is a 10% chance that AI "could kill all humans" has been viewed more than ten million times. It comes as Jacob Coxon resigns from the company warning that the two top companies are not "acting responsibly." But others say the warnings are overblown. We hear from experts and the public. We go to the U.S. where Apple is launching a new product, the first foldable iPhone — the first such launch with new CEO John Ternus. And a food safety crackdown in Mumbai, India's financial capital, has gone viral — with thousands of restaurant raids, and photos of filthy kitchens shared widely online. ‘Godfather of AI’ Geoffrey Hinton tells us the warning is plausible and urgent action to regulate artificial intelligence is needed. Also in the programme: Calls for answers in Westminster after a failure of the UK's air traffic control system causes more than 2,000 flights to be cancelled over two days. And Apple announces the introduction of the first foldable iPhone – but is the technology a gimmick, or the future of phones?

A top safety researcher at Anthropic has resigned, warning artificial intelligence is advancing so quickly he believes there is a greater than 10% chance it “could kill all humans” by the end of the decade. Posting on X, Evan Hubinger said the risk from the models which currently exist was “low”, but that the technology might develop into “superhuman systems that can hack anything” and “acquire real power and resources”. We hear from the computer scientist often described as ‘Godfather of AI’. Also in the programme: Israel announces further measures against the UK in response to sanctions imposed on goods from settlements in the occupied West Bank; new research suggests the consumption of very hot drinks might increase the risk of a type of oesophageal cancer; and does a hot, dry summer mean more alcoholic champagne?
